"Just realised you can't download Big Sur any more.
You will have to install Monterey."
The UK site is typically out of date . So is the rest of Europe. Yes the UK is still in Europe .
The European sites for Big Sur take you to Monterey
To get access to Big Sur on the
"How to get old versions of macOS"
you have to go to the USA site and use the link to Big Sur there in order to get Big Sur.

Use Safari to download macOS on your Mac
Safari uses these links to find the old installers in the App Store. After you download the installer from the App Store, the installer opens automatically.

Hi, here is a link that I found to download Big Sur
https://apps.apple.com/gb/app/macos-big-sur/id1526878132?mt=12
I found it on YouTube: https://www.youtube.com/watch?v=6uPv7-WHbXM - How to downgrade from macOS Monterey (to Big Sur and earlier macOS)
CleanMyMac is just the ad for the video
if you look further in the description it says:
"2. Create a bootable installer of Big Sur
Download macOS Big Sur installer here: https://apps.apple.com/gb/app/macos-big-sur/id1526878132?mt=12"
You need Big Sur.
It won't work on Catalina.

Thank you...
Looks good . . . but
DO NOT USE CleanMyMac !
CleanMyMac and similar types of "cleaning" or "optimising" apps are TOXIC and should NEVER BE USED OR INSTALLED.
I know that CMM is just an ad but don't be tempted to use it as it can affect the performance of pro apps like FCP.
