How do I print health data from my phone or export it.

There is no direct way available to print portions or all of the health data in the health app at this time. There are, of course, unconventional methods to print the data out and one of those options is to use screen shots or copy/paste. I know that this is not the most desirable method(s) because it is not efficient.
