Transferring data from old iMac to new 24" iMac with Apple M1 chip.

I am having a new iMac sent to the Apple store in Austin, TX. Can I take my old iMac to the store and leave for the Genius Bar to transfer my data?

You should call the store and check to see if they can and will do that for you.

If not, all you need to do is plug your old iMac’s Time Machine backup drive into the new iMac during the initial setup and Migrate from it. Tip: if you Time Machine backup drive is USB-A, then you will also need a USB-C to USB-A adapter.
