If you downloaded but don't want it and have not installed it,

then it sits in your Applications folder "Install macOS Big Sur.app"

You can revert to your previous macOS if that is what you are asking.

7 - Follow the prompts and it may automatically reboot several time. 

8 - Upon a final reboot - Setup Assist will present with the newer version of macOS.
