Cannot reset/pair watch (series 2) to new iPhone (11)

I don't have my old/previous iPhone and I reset my Apple Watch (series 2) but I CANNOT manage to pair/connect it with my current iPhone 11. When I try to get support I am asked the serial number of my watch, which I can't access obviously (watch is reset and old iPhone gone) !!!!
