Seems that Apple only includes the more recognized exercise activities and not work activities. The only choice I have is other or functional strength training. Where do I send a suggestion?

That is the expected use. It is assumed you will use "Other" for everything that doesn't have a name of its own, not that you would pick "Other" for just one thing.
