I have purchased Apple One which includes Could Storage, yet I was still billed for Cloud Storage separately. Should I physically cancel the separate subscriptions ie Cloud Storage and Music etc. I would have thought Apple would pick that up and correct it accordingly.

Subscriptions to iTunes Match and larger iCloud storage plans won't be cancelled automatically. Otherwise, ones to individual services will end when the Apple One payments begin.
