I have left family sharing, how do I keep all of my apps and subscriptions?

You will keep the apps, but you won't be able to update apps not purchased using your Apple ID. You will keep subscriptions that you subscribed to. Subscriptions that were made by a family member you will lose. If you want to keep the subscription, you will have to subscribe on your own.
