Can I charge iPhone 12 Pro Max with MacBook Pro M1 charger and iPad Pro (1st generation) charger?
Also, will there be any impact on long term battery life if we use these high watt chargers?

no all modern electronic devices draw the current they were build to charge with, the fact that a charger can provide more will just result in current not drawn
same as your car can often drive faster than is allowed on the roads you travel by.
