I have a sneak suspicion that you can't move photo albums into a single folder to organize my photos (i.e. have all my kid's soccer picture albums in one folder labeled "Soccer"). I just don't understand why, can someone please explain?

You can only move albums you create yourself, not the albums created by photos.
How are you selecting and dragging the albums? The easiest way is to select the albums in the "My Albums" view. You can even draw a selection rectangle around the albums. Then open the folder in the sidebar and grab the selection and drag the selected albums into the open folder. For example dragging five selected albums at once:

Well that’s great news, but when I try to drag albums into a new folder nothing happens. Photos will not allow me to do it. Is there some secret method to get albums into a newly created folder that I don’t know?

Added - you are asking about Photos on a Mac, not about Photos on an iPhone or iPad, right? On the iPhone and iPad you cannot drag the albums into folders, you have to create the albums directly in the folder where you want them to be. Only on a Mac we can drag albums or folders into other folders, but not into albums.

Yes you can. Folders can hold as many albums and subfolders as you like.
That was the trick...changing the view. No idea why that worked the other did not, but THANK YOU!!!!
