I purchased a new phone. At the store they began the transfer from one phone to another. It was time for the store to close. The technician said that they programs would finish loading at home. It has been three hours...not even appearing to be loading except for the word 'loading' below some of the apps.

Actually, the apps do not load from the previous phone. Instead, they are downloaded from the cloud.
Keep your iPhone on a strong Wi-Fi signal with a well charged battery while going through this process.
Make sure your iPhone is connected to power and to a stable wi-fi network to complete the loading. You may have to turn the phone off and back on again to get it to restart.
