I'm sure I read somewhere that the standard 2GB iCloud storage that's offeren as part of the Apple One subscription, can be expanded.
I have a 2TB iCloud subscription for € 9,99 per month and am considering switching to Apple One, but on condition of course that I don't loose storage capacity.
Does anyone know how to set this up?

just keep your cloud subscription in addition to Apple One. That is what I did and all my cloud data survived.
