Update Mac OS with no updates available?

I need to update my Mac OS however, on choosing 'software update' there are no updates available. I am unable to download outlook in the App Store as I do not have Mac OS 10.14 or later which is required. How do I update my Mac OS in this case?

Back up your data, check your applications for compatibility, and if your Mac model is recent enough, click on Mojave, Catalina, or Big Sur. Mojave requires a 2012 or newer one, or a 2010 desktop Mac Pro upgraded with a Metal-capable graphics card.

They're full-version upgrades and won't appear in the Updates list.
