I’m curious as to what data the Apple Watch & SpO2 app shows?
Does the Apple Watch also provide a Plethysmograph & Perfusion Index along with the Heart Rate and SpO2 data?

Unfortunately not by the watch itself,although there is an entry for peripheral perfusion in the health app and you can add data manually,maybe a future feature.
