Watch seems paired but watch app thinks it’s not
My watch picks up texts and seems paired but when I open the watch app on my phone it wants to pair and won’t let me do anything else. I’m afraid to reset it and get locked out

Did you try restarting both devices, does that help?
If the issue persists, you could try if unpairing still works. As part of that process, a backup of your watch is automatically taken to your iPhone, so you are safe from that point of view. You can start unpairing from here:
