Why are some events being removed from my calendar? I’m using iOS 14.6.

Maybe it is someone else’s subscribed or shared calendar that you have on your phone. Maybe you have the option to delete or hide completed events enabled. And maybe you aren’t viewing all of the calendars on your phone. In the Calendars app tap on Calendars and see who owns each calendar, and make sure all of them are checked. It’s hard to guess further without more information.
