How to stop random capitalisation of mid-sentence words

Within the last month, I've noticed a big uptick in the number of words Apple auto caps. Some of the words are natural, like "May", even though the word wasn't used in the proper context and "may" is way more common than "May". Other words aren't even names, they're just randomly capitalised words. I can't turn off Auto-Capitalization because it will stop capitalising the first word of each sentence.

I guess this is less of a question of how to stop it, because I'm pretty sure there's no answer. It's more of a plea to Apple to fix this feature and possibly divide the feature into two functions: one that operates all of the time and one that operates only when preceded by a sentence ending punctuation.
