How do I revert to a previous version of iOS 14? I have 14.5 and several apps which I used at work will not open.

It is not possible to downgrade any version of iOS to a previous version. The apps will have to be updated to be compatible. Although it is unusual for a “point” upgrade to break an app unless the app flakey to begin with.
