i am trying to transfer data from my iPhone 11 to 12 using the phone and when the message pops up so you want to use this Apple ID it has a phone number for my apple ID I don’t recognize. How do I change that?

You need to change/add the number on your Apple ID. After the change, allow up to 24 hours for the change to sync. Before trying to make the change, sign out of Messages/FaceTime on all devices/computers.
