You can enable the camera composition grid directly from iPad settings:

Settings > Camera > Grid - set to ON

Screenshot Grid removal went to take a photo and accidentally took a screenshot with a grid. Can I now remove the grid from my screenshot????

Is this for taking a photo/image with the camera or to add a grid to a photo or image AFTER the fact?
