Change ipad Mini 4 registration from husband over to wife's name and phone number

For some reason I can't remember, I originally set up my wife's iPad Mini 4 with my name and phone number. We are now about to change all the apps and data over to a new iPad Mini 6, but would like to her name and phone number on the new device. (When my iphone receives a call, it simultaneously rings on her iPhone, which I would like to fix.) Easiest way to fix? Just received new Mini 6, but haven't yet set it up.

By far the simplest method to resolve unintended sharing issues is to prepare the iPad, from scratch, for a new user:

What to do before you sell, give away or trade in your iPhone, iPad or iPod touch – Apple Support

This procedure will completely wipe and reset the iPad - and you can set-up again “as new” from the initial “hello” page.
