On my Mojave MacBook Pro, when I rename a file, it just highlights the file name.
On my Big Sur MacBook Pro, it highlights both the file name and extension.
I cannot find a Finder option to change this behavior, am I missing something or has Apple changed the behavior and I cannot do anything about it?

I found that the issue was file type specific which did not have a registered application. Once I installed the associated application, the renaming worked as I expected.
Click once on the filename that you want to rename in the Finder. Press return and this selects the basename only, where you rename the file, and then press return when you are done.
I am on 11.3, not sure why it showed 11.2. Also not sure why Apple recommends this response or how it remotely relates to the issue.
I'm doing the same process on both Macs, so reiterating the process of how to rename is not helpful.
