I’ve been trying to update my watch(series 4) for 4 days now. It won’t update. It’s connected to WiFi and I’ve even tried unpairing it. Now it won’t even get past the update screen from the phone app

Right right, the key thing then is to select the Set Up as New option during the pairing attempt. Say NO to the "Analytics" and "Install All Apps?" prompts as well. That should give you a factory level S3 watch with about 3.1 GB free storage, as shown in the screen capture below. As you can see the update is about 2.6 GB and will fit in.
During the unpair a full backup of your watch was taken to your iphone, and you can then later restore that, after the update is complete. Yes it is a very tedious process overall with the S3 GPS only model.

I think I'm having the same problem.... it's a never ending loop of unpairing the phone and watch, installing the software, then pair the two, which forces you back to the install screen where your only option is to install the software again.
Try to run the update from the watch itself:
I just get this screen. It goes through almost an hour of updating and comes back every time with the “can’t verify the update because you’re not connected to the internet.” This is so frustrating. So now this is my screen on the watch.
Try hard reset of the paired iPhone, per this article:

When it's stuck like that, what is it showing in the watch itself, under Settings > General > Software Update ?

I have tried this step several times on my series 3 and the update still won't update-unpaired and set up as new watch and i get the alert to unpair as new watch in order to update...i give up.
It could be the case that your current watchOS is more older version..., are you currently on V6 or something? It's an extra challenge to install this update in that situation.
