I changed my logo for my podcast over 75 episodes ago but I cannot seem to get it updated on Apple Podcasts. I have searched online and most of the answers down make sense to me and many conflict with each other.

Your image needs tp be compliant with the requirements, and it's important that the new image has a different file name. However there is an ongoing problem at Podcasts Connect whereby even compliant images don't seem to be recognized and you may have fallen over that.
