My current "Mid 2011" iMac was delivered with
a 256GB SSD (where the apps are stored) and
a separate standard 2TB rotational HD (where data, eg music, photo's, etc are stored).
It is time to buy a new iMac.
When I come to migrate the data from the old to the new iMac (which I understand only has one SSD), how do I deal with the fact that the original has split data across two drives?

Fusion Drives are in 2012 or later iMacs. Never in a 2011. The SSD size was never over 128GB. So, this is not a Fusion Drive. Also, if it was Fusion, it would say so in About This Mac > Storage.
Only macOS and files on the SSD in this case can be moved via. Migration Assistant, connected to both the old Mac and the new Mac directly with an Ethernet cable. Other data must be moved manually with some method, such as an external hard drive.

I thank you for your prompt response. I am not sure if it set up as a "fusion drive": I looked that up and found a definition of
"Fusion Drive is Apple Inc's implementation of a hybrid drive. Apple's implementation combines a hard disk drive with a NAND flash storage (solid-state drive of 24 GB or more)[1] and presents it as a single Core Storage managed logical volume with the space of both drives combined."
When I looked at ABOUT THIS MAC on my iMac, it presented as:
Which doesn't suggest (to my untutored eye) a single combined drive, but two separate drives.
So long as this is irrelevant to how TM works (yes I do have a TM backup) then all good?

I assume your present Mac has a fusion drive? You should have a Time machine backup of your present Mac. Then connect that to to your new Mac and upon startup pick TM to migrate and it will transfer all the correct data, files, apps, etc. from TM to your new Mac. Need not worry about the original drive setup.
So the TM back up cannot help with the migration?

I agree with Jack-19 looks like you just have two separate drives and not Fusion. Looks like the manual process to restore may be required.
