Unless Epson is making the driver compatible with Big Sur, you are in a bind as VueScan won't drive this scanner without a compatible Epson driver installed. Epson provides v5.8.9 ICA (image capture) driver dated Jan 2021 for macOS 11.0. That may be all you need, provided it works.
