Lost my phone, how do I unpair my apple watch?

Here are two ways to unpair your watch if you no longer have the paired iPhone:

• With a web browser, go to: https://www.iCloud.com and sign in with your Apple ID. Open Find My iPhone and select All Devices (at the top). Then click your Apple Watch, select 'Erase Apple Watch', and select Next until the device is erased. Finally click "X" next to remove your Apple Watch.

To unpair and erase watch and remove Activation Lock.

On a computer, go to iCloud.com and sign in with your Apple ID.

Go to Find Iphone.

Select All Devices, then click your Apple Watch.

Click Erase Apple Watch.

Select Next until the device is erased.

Click the remove button next to your Apple Watch.

Then go here;

Pair the watch with my new phone.

You should be able to go to iCloud and delete the device from your apple account doing so should remove it from account. But also you should to unpair and delete the data on your watch. Find out how by visiting: https://support.apple.com/en-us/HT204568
