could i bring my old iMac to the apple store to transfer my data to my new iMac

You best check with Apple (we are all other users here), but I don’t think they do that any more. Besides, it is much easier to transfer your data from your backup on an external drive. Just plug that in - much faster too. Just follow the on screen prompts when first setting up the new one.
