How to install iTunes on macOS Big Sur and how to backup iPhone data

I'm using MacBook Pro 13 2020. and I'm having difficulties to backup my data from iPhone.

Apple split it up in Catalina. Backups are now performed from the Finder; if you encounter a specific issue, describe it in this thread.
