My last episode is not showing on the Apple Podcasts app nor on iTunes

There can be a delay in episodes appearing in Podcasts 'Browse'/iTune Store but it's usual;y around 2 days, not 2 weeks. I can't see anything in your feed which could explain this, and as it's appearing when subscribed to it's presumably OK. Try going into Podcasts Connect and refreshing your feed.

If you can't get the episode to appear I can only suggest contacting Podcasts Support. Go to https://itunespartner.apple.com/en/podcasts/overview and click the 'Contact Us' link at the bottom of the page.
