Hello Natcat,
According to this 2021 post by ASSC helper SravanKrA you cannot restore a missing message without restoring a device entirely using a backup from an earlier date. Depending upon when you last backed up your device to a computer, the post suggests you may be able to restore a message using a complicated set of archiving of backups and multiple restoring of those backups to a device.
