Apple Watch won’t pair since I can no longer update my iPhone

I just bought a Apple Watch and am trying to pair it with my phone but it won’t pair since I can no longer update it. Is there any way to move around this

The new watch(s) require IOS 14

Your iPhone must be 6S or newer that can run IOS 14

Apple Watch won't pair with new phone. So I just recently got a new phone (Iphone 12) and I'm trying to pair my apple watch with it but every time I do it says it won't pair because it needs to be update but I can't update it without pairing it. I don't have my old phone anymore so I can't use that either. It's like a vicious cylce: it won't pair without being updated but I can't update it until it's paired. I've reset it three times as well and nothing is working.
