My ipod 7 touch is stuck on iOS 12.5.1
I've tried everything from restoring it to putting it in recovery mode and setting it all up again. Im really just wondering if theres a fix for this problem.

Are you sure it's 12.5.1 and not 12.5.5? If it is 12.5.5 you probably have a 6F iPod, not a 7. If it's truly 12.5.1, you have a different problem. Try updating directly on the iPod (Settings>General>Software Update)
