please intereduce me to removing big sur and install same catalina

How to Create a Bootable Installer from Apple Support document. Strongly suggest making a Time Machine Backup Before attempting. Also, do understand downgrading involves Erasing the Internal drive . . so everything will be gone 100% - all apps, music, videos etc.
