If you're trying to change an email address associated with an Apple ID, the following is supposed to work:

Change your Apple ID - Apple Support

If that's what you're trying, what happens when you try it, and what else have you tried?

If not... We're going to need a few more details. Is this an Apple iCloud.com address, some other Apple address, an email address from some other provider, what happens when you try to change the email account, etc?
