To install the Microsoft Office Premium suite, I am required to have at least a Mac Os X 10.14.0 version.
I currently have Mac OS High Sierra 10.13.6
Is it possible to upgrade? If so, how?

Back up your data, check your applications for compatibility, and if your MacBook Air is a 2012 or newer model, download Mojave, Catalina, or Big Sur. If not, you can't; switch to a product such as LibreOffice.

Do you have a recommendation on how to choose between "Mac OS big Sur" "Mac OS Catalina" or "Mac OS Mojave"?
Choose the newest one which is compatible with the software you use. In particular, 32-bit applications won't run in Catalina and newer.
