I want to run a Big Sur only app(controlly) but I have a machine that don't run Big Sur, I have Catalina, what I can do?

Contact the Controlly app vendor, and request that they add support for older macOS versions:

That the app requires features that first arrived with macOS Big Sur would not be a surprise, but the app vendor support folks will know the details here.
The alternative for a Mac that cannot be upgraded to Big Sur is a newer or new Mac.

What to do:
Either use Big Bur, or ask the developer if they have a Mojave (or prior) version.

Catalina 64bit-Only:
Note that macOS 11.1 is Big Sur is 64bit only. So, if the developer has no 64bit version, then that would be a reason as to why to it is not an option. So, ask the Developer if thy have 64bit version.
