I have a powerbook runnning Mojave 10.14.6 and an iPhone 7 running Software Version 14.3 . My computer is telling me a software update is required to connect to iPhone. What update is it, and is there any way to avoid it?

Accept the update, it may be a security update. It will update Mojave, it will not take you out of Mojave.
