Can I copy and paste an iMessage to my Notes?

You can copy individual message bubbles. but you cannot just select a message thread and copy and paste it.
If you just wish to copy and paste a single bubble, just press and hold the bubble, you will see a short menu appear, you can select copy. Then go to Notes and select Paste.
