I’m the iCloud administrator, so if I invite others to share my iCloud space in order to back their phones, will their photos, contacts, notes sync with mine and I’ll have them in my iphone and viceversa?
Can I give them an individual space within my iCloud so we don’t get to share our personal data with each other?

No, your data would not be intermingled with other individuals in the family providing everyone has their own Apple ID.

No, iCloud storage space cannot be assigned.
What do you mean by "iCloud administrator"? Does that mean you're the organizer of the Family Sharing?
