Watch not tracking my sleep

I'm experiencing an issue with my new Apple Watch - for some reason no sleep data is showing on the watch or on the iPhone Health app. I have all options switched on, including sleep tracking and sleep schedule in the Health app but there is no sleep data at all. Maybe the reason is that I go to sleep later than my sleep schedule says and wake up early too? But I would expect the watch to track my sleep simply whenever I'm sleeping, regardless of schedule. Any hints? I'm referring to Watch series 6, and on my phone I have iOS 14. I would love to be able to finally see my sleep data.
