how to restore without updating?

I have a new iPad and got immediately locked out (it was a long morning:) Therefore, there's nothing on the iPad so I just need to restore it and we're good. However, when i go to iTunes, it's forcing me to restore and update, which is pushing it past the 15 minutes aloted before the ipad times out and i have to start over. I don't need to update the software, just restore it. But there doesn't seem to be an option for that.


How can I bypass "restore and update" in iTunes and just do "restore ipad"?

Yup. That was it. Had to hardwire the computer, then do the restore, and Christmas is saved.
