How can I eliminate words the computer chooses instead of what I want to say
I want to eliminate the words the computer thinks I want. What do I need to do?

System Preferences > Keyboard, then the Text tab.
Uncheck all three boxes:
The system will still put squiggly red lines under misspelled or unknown words, but will not try to autocorrect anything.
