I was told I can purchase AppleCare from my new MacBook Air 2020. I cannot find any field or option to do that.

Try looking in AppleID System Preferences.

That's where it was on my new iPhone. I can't remember for my MacBook Pro. I seem to think there was a countdown and link to purchase it.
