Upgrading Apple Watch
If you purchased an Apple Watch that includes GPS, are you able to upgrade to cellular?

It is not possible to upgrade the hardware. You need to buy the correct version.
It will not cause any problem to buy the cellular version but not activate the cellular functions until some time later. The watch will behave exactly like the GPS version until you ask your network to add it on your plan.
