I recently purchased a new M1 MacBook Pro running Big Sur. I will be migrating from a older MacBook Pro running Catalina. Should I update the older MacBook Pro to Big Sur before transferring my files from the older MacBook Pro to the new M1 MacBook Pro, or doesn't it matter?

The only way that you can do this is to use Migration Assistant.

Make sure you also Migrate via a direct connection. Migrating over WIFI rarely works and will take overnight most likely.

We plan to use Migration Assistant to perform the migration. The question is whether there is any advantage to upgrading the older MacBook Pro from Catalina to Big Sur prior to the migration?
Agreed. We used a direct connection with Migration Assistant to migrate the contents from an even older MacBook Pro to the current MacBook Pro.
M1's can't run Catalina.
Upgrade the old Mac to 11.1 prior to migration for best results.
