reverse an update

I want to go back to a previous IOS. Can I reverse an update and go back to previous software version?

MacBook Pro 13″, macOS 10.15

I recently updated my MacBook Pro from High Sierra to Catalina. Now some very important programs are not functional, and in order to up date them the software developer wants $540. Can’t spend that, so I want to get rid of Catalina and go back to High Sierra, where everything works. That’s what I mean.
