I can not update my watch because not enough space, even after I deleted all my apps.
But the apps from Aplle like photos and music can not be deleted.
How do I solve this. How can I update my iWatch now?

Unpair your Apple Watch via the Watch app on your iPhone.
Then Re-pair your Apple Watch,this deletes temporary and corrupted files
and also clears the system cache freeing up a surprisingly large amount of storage space.And without any loss of data.
Yeeehhh 🎉🎉🎉 that worked, took 3 hours to update but now I am back on track with, indeed, a lot more space.
