I have a new phone and I cannot pair my watch with it because it is paired to my old phone that is lost.

I have the new iPhone SE and I cannot pair my watch to it because it is paired with my old SE which is lost. I do not want to lose and Data by erasing it because I am in a health program with Aetna and the pay for my watch based on my activities.

I don't think that you can have it both ways. To unpair the watch from the lost iPhone requires erasing the watch. Erasing the watch without a recent backup loses the most recent data.
