Saving One page of a PDF or any other document in Big Sur

I can no longer select: "File->Print->Save as PDF" with Big Sur. I want to take any document (PDF or anything printable) and select a specific page(s) and save/export that page(s) to a PDF. I am able to export anything to a PDF File or take a current PDF document in Preview, delete all the pages I don't want and then "Export to PDF". This is cumbersome, especially if I'm not starting from a PDF file. In the previous OS versions I was able to simply do the "File->Print->Save as PDF" and simply by selecting specific page(s) my job was essentially done. Did Big Sur remove this feature? Is there another way to do this easily or is the way I described above the simplest way?
